ニュアンス・使い分け
most of は the・my・these や代名詞など「特定された」名詞の前で of を付ける形で、of の後ろが特定されていない一般的な名詞のときは of を付けず most students のように言う。つまり most of students は誤りで most of the students が正しい。動詞の単複は of の後ろの名詞に合わせる（most of the water is / most of the books are）。
語源・由来
most（many/much の最上級で「最も多い」）+ of（〜の中の）で「〜の中で最も多い部分」を表し、「大部分」の意味になった。
